Easy Baked Spareribs Recipe

Pork spareribs are topped with a quick balsamic vinegar barbecue sauce and baked to tender perfection in the oven. The meat literally falls off the bone. If you like that char on your ribs, you can finish them on the grill or under the broiler. The easy barbecue sauce is a tangy delight. Make up a batch to keep on hand for other meats and seafood. Sweet and Spicy Cocktail Meatballs Appetizer Recipe

The key to these delicious meatballs is the incredibly simple sweet yet spicy sauce. Raspberry chipotle sauce is all the rage but can be time-consuming to make and often difficult to find pre-made in the stores. The simple solution is a combination of spicy salsa and raspberry jam. The heat from the chiles makes a beautiful counter-balance for the sweet jam. Try experimenting with other fruit jams as well. I have included a meatball recipe here, but you may use frozen meatballs, if you wish. These are the ultimate party appetizer.

Bacon Corn Saute Recipe

Everything tastes better with bacon, especially fresh corn. This recipe is a Southern favorite sometimes referred to as "fried corn." The bell peppers add additional flavor as well as color. You may use all green or all red bell peppers, if you wish. Check out the Notes for a tip on how to freeze any leftover bell pepper for future use. The natural flavor of this side dish is so fabulous, you will probably not even want any salt in it. Most importantly, do not over-cook. The vegetables should still have a slight crunch to the bite and the colors should remain bright.

Easy Provencal Cod Fish Recipe

This easy Provencal-style cod fish recipe can be on the table within 30 minutes. Bell peppers, olives, and tomatoes give a burst of flavor to otherwise bland cod fish. You will note from the photo that red and yellow bell peppers (sweet capsicums) were used. Any combination of red, yellow, and/or green bell peppers works just fine and makes a colorful presentation. Any firm whitefish (such as halibut, grouper, or shark) may be substituted for the cod. This recipe is easily halved for an intimate dinner.

Lemon Apple Chicken Recipe

Lemon-coated apple slices placed under the skin of the chicken not only lend flavor, but also keeps the breast meat moist and juicy. This is an easy, yet elegant recipe for roasted chicken. To serve, I like to leave the skin on the dark meat pieces, but remove it from the breasts to expose the apple slices. In either case, this chicken is a real crowd-pleaser.
